We're on acreage outside of town a ways, yet neither one of us really enjoy the luxury ..er opportunity to hunt. Well.... I hunt magpie alright, but I am pretty sure how I hunt them is illegal - so I claim the fifth... ha! They're ugly scavengers that make a lot of noise and mess, and interrupt with my quiet country life. For the record, I have not been successful, so resist drawing judgement..no magpie have been killed on my account. But it sure is fun trying. We're also trying to trap and disarm a gopher...haven't had much luck with that either. Guess that's what we get for boasting we haven't had gopher issues for three years, and now it's like Satan himself is having fun burrowing in our front yard! Anyhow, we have deer and fawn that come through regularly, LOTS of turkeys, some elk, and we've seen a moose (cow) and her calf. A hunter's dream...but it still just doesn't tempt us much...the sport is expensive! I like to shoot, but really can't explain why hunting isn't my style...nor my husband's for that matter. The reality is, we feel we have the best of both worlds. Fine by me if someone else wants to pay for the sport, get up early in the morning, and freeze their butt off in hopes of shooting something. We'll gladly let them, and graciously accept their token meat offering instead. Last week during bow season some friends caught their doe! They gave us some deer meat ground up like hamburger, so I decided to try some spaghetti and venison meatballs. We felt like for one night we were living off the land. Most of the veggies for the salad came out of our garden, and the deer was just walking by a week ago! It was actually quite tasty and very lean, and not too gamy. Well, what can I say...it was what's for dinner! Have a recipe with game meat you'd like to share?
Recipe:
1 lb ground pork sausage
2 lb ground venison
1 cup breadcrumbs
2 eggs
1 cup milk
1 tsp garlic salt
1/4 tsp pepper
1/4 cup Parmesan cheese
Mix all ingredients together in a large bowl. Form 1-2 in. balls and either broil in broiler pan..{or I just poured a couple tablespoons canola oil into my large stir-fry pan and cooked them with the lid on, turning them 1/2 way after they had browned after a couple minutes}.
Simmer in your favorite spaghetti sauce and serve with pasta.
This made quite a few meatballs, with leftovers to freeze, I would say approx 8-10 servings.
